Of note is how there is just one unified build — CD5A.260611.00 — for the Pixel Watch 5, which is codenamed “goteria.” Wear OS 7 is based on Android 17, which Google rolled out in June to existing devices. It remains to be seen which Pixel Watch 5 features will make their way to older devices. The next update should be in September with the Q3 Pixel Drop.
Historically, there have been separate builds for the Bluetooth/Wi-Fi and LTE models. This unification could help streamline the build process internally.

A Google Play Console listing previously leaked a “godric” codename, so “goteria” is presumably another portmanteau.
Like last year, flashing factory images on the Pixel Watch 5 “requires a debug adapter that Google distributes by invitation only.” That was the one benefit of the Pixel Watch 2 and 3 cable.
